This recipe comes courtesy of my friends, Nicole, Rachel, and Steve, at Thirsty Hop in Kirkland, WA. I was looking for a low-carb summer cocktail and they knocked it out of the park! I highly recommend you join them if you're in the Seattle area; they have a full bar, alcoholic seltzer on draft, and wine. You can even get a sandwich on Keto bread! And for those of you who aren't doing the low-carb thing, they have a wonderful array of craft beers which rotates frequently (thus the name of the taproom). They are also lovely people, which makes an already excellent experience that much better.
Nicole first introduced me to the idea of a sparkling water infused with hops. I see there are a number of brands out there; Thirsty Hop happens to use the Lagunitas Hoppy Refresher. It really lifts this perky gin cocktail and gives you that essence of hop you might be missing if you follow a low-carb eating plan. Then the cucumber comes in and smooths out the whole thing.
This one is perfect for sitting outside on a warm evening and enjoying something from the grill.
Food pairing: Greek Marinated Keto Lamb Chops

Ingredients
 
 

  • oz. gin
  • ½ oz. St. Germain
  • ½ oz. lime juice
  • 6 oz. hop-infused sparkling water (without sugar, of course)
  • ½ oz. chopped cucumber (there's no need to peel it)

Instructions
 

  • Put the cucumber in the bottom of your shaker and muddle it to release the flavor.
  • Add ice to the shaker.
  • Add the gin, lime juice, and St. Germain to the shaker and shake it vigorously.
  • Pour the whole thing, unstrained, into a tall glass filled with ice.
  • Garnish with a lime wedge.
