In my quest to find other uses for my Diet cranberry juice and coconut milk, I came across this recipe from The Spruce Eats and decided to de-carb it. I substituted the orange liqueur with my sugar-free triple sec and tried it with some reposado tequila as a variation on blanco. I liked it so much I'm putting it in my recipe.
It was so good I couldn't save the recipe until the holidays, so I decided to publish it now as my Christmas in August Margarita. It will be just as good for Hanukkah, Diwali, Kwanzaa, or any holiday you celebrate during winter, but now you can have it a few months early.
Don't get me wrong; I'll still be drinking this in December...

Ingredients
 
 

  • 1.5 oz. reposado tequila Or you can use blanco if you prefer.
  • 1 oz. coconut milk Oh, yeah, the full-fat kind.
  • ½ oz. sugar-free triple sec or orange syrup or you can make your own
  • ½ oz. lime juice
  • ½ oz. Diet cranberry juice Look for the one with 5 calories and 2 grams of carbs.
  • cup granulated erythritol Or your favorite granulated, carb-free sweetener, for rimming the glass.
  • ¼ tsp. cinnamon For rimming the glass.
  • Fresh cranberries and/or a wedge of lime For garnish.

Instructions
 

  • Mix the granulated erythritol and cinnamon together on a small, shallow plate.
  • Wipe a wedge of lime around the edge of an old-fashioned glass and roll the edge in the cinnamon/erythritol blend to create your fancy rim.
  • Fill the glass with ice.
  • Put the tequila, coconut milk, sugar-free triple sec, lime juice, and Diet cranberry juice in a shaker with ice.
  • Shake it well to make sure the coconut milk gets incorporated.
  • Strain it into your prepared glass.
  • Garnish with a few fresh cranberries and/or a wedge of lime.
