I also had some full-fat coconut milk left after making my Thai curry, so I adapted another of Steve the Bartender's recipes to make it low-carb. The Batida de Coco is a Brazilian cocktail, though it doesn't seem to be very well-known in the US. Well, the secret is out! I was shocked at how refreshing and delicious it was, so I hope you'll try it and comment below. For my Keto friends, there is the added benefit of some fat from the coconut milk. Ingredients
- 1.5 oz. Cachaça
- 1 oz. full-fat coconut milk
- ¾ oz. sugar-free simple syrup
- ½ oz. lime juice
Instructions
- Put all the ingredients in a cocktail shaker with ice.
- Shake it thoroughly to combine the coconut milk with everything else.
- Strain it over crushed ice into an old fashioned glass or small goblet like the one pictured here.
